Winter is right around the corner here in Europe, and personally I think it’s beautiful!


Even though sometimes it gets very cold, the days are beautiful with a blue sky and people dress more elegant with coats, gloves and hats.

It’s so graceful! And to end your day with a special touch a bowl of hot soup is great.

Especially here in Portugal, soup is part of their culture. It’s usually served before meals and they have so many to choose from. I didn’t even know that there were so many types of soups. There is stone soup, Caldo Verde, meat, fish, vegetables, pea, pumpkin, cabbage, mushrooms, asparagus, Juliana, beans, tomato, Spinach, and Fisherman soup… And that is only to name a few!

I recently had to travel and after a day of work because it was late, I wanted to buy some soup for dinner. I searched everywhere and found nothing. It’s very different from here. Here wherever you go you will always find fresh homemade soup.

So, how about taking advantage of this winter and start correcting your eating habits starting with dinner? Did you know that we lose weight overnight and everything we eat counts? A light meal full of vitamins and nutrients like a vegetable soup is essential. If you are accustom to eating only soup for dinner without bread or crackers, you will feel the difference in your sleep, mood and even see it in the scale.

Here are two recipes that I did recently made without potatoes and it came out thick. It was delicious!

· 2 onions

· 2 cloves of garlic

· 2 leeks

· 2 zucchinis

· Salt to taste

· 1 tablespoon of olive oil

Cook everything in salt water and blend it together in the blender or with a hand blender. 

( * ) If you use a blender always wait for the soup to cool down before blending all the ingredients together.

· 1 Cauliflower

· 1 zucchini

· 1 leek

· 1 onion

· 1 coriander sauce

· Salt to taste

· Cook everything in salt water and blend it together in the blender or with a hand blender.
